Bacon & Bleu Salad

BLT in a bowl with bleu cheese anyone?  Easy to make and very delicious!

Ingredients:

  • Romaine Lettuce mix
  • 1 diced tomato
  • 1 chopped cucumber
  • 1 chopped red onion
  • 1 cup shredded carrots
  • 1 package Perdue chicken selects
  • Bleu cheese crumbles
  • Bacon bits

Top with Bleu Cheese dressing or another one of your favorites!

 

A Marvelous Taco Salad

How about a quick and delicious taco salad to enjoy this week?  Let’s get right to it, then!

Cooking Instructions:

  • Saute 1 lb of ground beef and add 1 taco seasoning packet with water (per package instructions)
  • Pour in one can black beans, saute, and set aside

Salad Ingredients:

  • 1 bag romaine lettuce
  • 1 chopped cucumber
  • 1 diced tomato
  • 1 small can corn
  • 1 chopped red onion
  • 1 cup shredded carrots
  • 1 chopped avocado
  • 1 small can sliced olives

Devouring Instructions:

  • Place salad mixture onto a plate, add warmed up ground beef*
  • Sprinkle on some cheddar or Mexican cheese
  • Top with a tablespoon or two of salsa
  • Add a dollop of sour cream
  • Serve with favorite dressing

*I keep ground beef mixture in its own container in the fridge.  Then, I warm it up and add it on top of the salad just before serving.

Asian Sesame Chicken Crunch Salad

This salad is beyond delicious!  It is totally on par or better than any salad I’ve ever ordered out.  Here’s the recipe!!

Salad Ingredients:

  • Romaine Lettuce – I used a romaine lettuce bag mix which also included shredded carrots
  • 15 oz can of mandarin oranges
  • 1/2 cup wonton strips
  • 1/4 cup slivered almonds
  • 1 package Perdue chicken shortcuts

Dressing Ingredients:

  • 1/2 cup rice vinegar
  • 1/4 cup canola oil
  • 1 tablespoon of sesame oil
  • 2 tablespoons soy sauce
  • 1/4 cup sugar
  • 1 tablespoon of sesame seeds

A Salad with Some Mexican Flair

I love making all different kinds of salads rather than the same old thing.  I make this one pretty regularly as it’s delicious and eats like a meal.

Ingredients:

  • Bag of spring mix salad
  • 1 diced tomato
  • 1 chopped cucumber
  • 1 small can sliced olives
  • 1 can nibblets of corn
  • 1 can of blacked beans
  • 1 chopped avocado
  • 1 bunch of chopped celery (not typically but I had some so why not?)
  • 1 package Perdue chicken shortcuts

Toss, top with your favorite dressing and enjoy!

BBQ Chicken & Cheddar Quesadillas and A Delicious Twist to Chicken Salad 

Before we headed out for a bit, I threw some frozen chicken breasts in the slow cooker to cook. They were partially cooked when I was ready to use them so I cut them up and sautéed them in a pan to cook them the rest of the way.

I took half the chicken and made some BBQ Chicken and cheddar cheese quesadillas for dinner.  It’s a great finger food for kids so this worked out great for a family dinner.

I lined the bottom quesadilla with white rice, added Chicken, BBQ sauce, topped with cheddar cheese, covered with the top layer, cooked them, and served sour cream on the side for dipping.

By the way, I love my little Hamilton Beach Quesadilla maker. Got it on Amazon for under $20 and it doesn’t take much room on the counter.

With the rest of the chicken, I made this delicious chicken salad which contained approximately:

 

  • 2 cups of diced (or shredded) chicken,
  • 3/4 cup chopped celery
  • 1/2 cup slivered almonds
  • 1/2 cup craisins
  • 1 tablespoon of lemon juice
  • Mayonnaise to taste

It’s so delicious!!  Definitely going to enjoy lunch at work this week.

 

Honey Crisp Apple Salad

After preparing food for the family  on most weekends, I rarely have the energy to prep food for myself for lunches for the coming week. Well I’m happy that I made myself do it today. I pinned some amazing looking salads on Pinterest that I want to try. Although I didn’t follow the following recipe exactly, it looks delicious if you ask me.

Here are the ingredients:

  • 1 bag spring salad mix
  • 1 sliced honey crisp apple soaked in 1/2 cup of lemon juice to prevent browning
  • 3/4 cup craisins
  • 1 cup pecans – halved
  • Sliced chicken breast – I used a package of Purdue shortcuts

This should provide me 3-4 salads this week for lunches.  Don’t forget to pack your favorite salad dressing! Very excited. 🙂
